Baked Mexican Salmon Croquettes

  1. 1 can Red Salmon
  2. 2 tbsp diced, pickled jalapeno
  3. 1 large egg
  4. 1 tsp parsley flakes
  5. 1/3 cup of grated cheese (I used Great Value Fiesta Blend)
  6. 1 tbsp Adobo Spice Mix (the mix I use)
  1. In a large bowl, mix everything until well incorporated.
  2. Place 1/4 cup of mixture into a silicone cup
  3. Bake at 350 degrees until browned, dry to the touch, and somewhat "firm but springy" in the center.
  4. Remove from oven, and silicone cups.
  5. Serve with salsa and/or guacamole.
