The first days and weeks of any diet or way of eating change are hard, sometimes even BRUTAL. Tired, hangry, irritable. You’d kick the cat if you weren’t seriously thinking about BBQing that beastie up. But before you let yourself fall completely off the wagon, before you decide that change isn’t possible, and you just aren’t cut out for this, try whipping up this super simple treat that should placate your chocolate, sweetie, fattening demons and have them sitting quietly in the corner absentmindedly picking their noses.

My Secret Weapon: Chocolate & Chia Seeds

Chia Seeds: These tiny little gems expand to absorb up to 12 times their own weight. This creates bulk in your stomach that will keep you fill for hours. Plus, chia seeds provide blood sugar-stabilizing magnesium to ward off cravings PLUS Omega E’s that have been shown to boost metabolism and keep your fat burning engines revved.

Cocoa: Recent studies show that in addition to decreasing blood pressure and improving blood vessel health, consumption of flavonoid-rich cocoa decreased “bad” LDL cholesterol among people under age 50, and increased good HDL cholesterol. Flavonoid-rich cocoa consumption also was linked to reductions in risk factors for diabetes. Also, resistance to the hormone insulin, which helps regulate blood sugar, favorably dropped among people who consumed flavonoid-rich cocoa, compared to people in comparison groups. Further, consumption of flavonoid-rich cocoa did not change triglyceride levels of study participants or make them obese.

Ingredients

  • 1 can coconut milk
  • 6 tbsp organic powdered chocolate, the darker the better
  • 6 tbsp low or no calorie sweetener
  • 6 tbsp Chia Seeds
  • 3 tsp vanilla extract

For sweeteners, chose what you like. I chose stevia and erythritol. Adjust as needed.

For chocolate, or Cocoa powder, I use unsweetened.

Step by Step Instructions

Step 1

Place the coconut milk in a blender and blend until uniform.

Step 2

Add the cocoa, vanilla, and sweetener, and blend until uniform.

Step 3

Turn blender to low, add Chia seeds, and blend until incorporated.

Step 4

Pour into ramekins or small bowls. Chill overnight. Serve.
